Description

A rich and creamy custard dessert with a crisp caramelized sugar topping.


Ingredients

  • 6 large egg yolks
  • 1/2 cup granulated sugar, plus more for topping
  • 2 cups heavy cream
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a medium bowl, whisk together the egg yolks and 1/2 cup sugar until pale and slightly thickened.
  3. In a saucepan, heat the heavy cream over medium heat until it just begins to simmer. Do not boil.
  4. Slowly temper the egg yolk mixture by gradually whisking in about half of the hot cream.
  5. Pour the tempered egg mixture back into the saucepan with the remaining cream. Stir in the vanilla extract.
  6. Cook over low heat, stirring constantly, until the custard thickens enough to coat the back of a spoon. Do not let it boil.
  7. Strain the custard through a fine-mesh sieve into a bowl.
  8. Pour the custard evenly into four 6-ounce ramekins.
  9. Place the ramekins in a baking dish and fill the dish with hot water halfway up the sides of the ramekins.
  10. Bake for 30-35 minutes, or until the edges are set but the centers are still slightly jiggly.
  11. Remove the ramekins from the water bath and let them cool completely.
  12. Chill in the refrigerator for at least 2 hours, or until firm.
  13. Before serving, sprinkle about 1 tablespoon of granulated sugar evenly over the top of each custard.
  14. Use a kitchen torch to caramelize the sugar until it forms a crisp, golden-brown crust. Let sit for a minute before serving.

  • For best results, use fresh, high-quality eggs.
  • Ensure the water bath is hot when you place it in the oven.
  • If you don’t have a kitchen torch, you can caramelize the sugar under your oven’s broiler, watching very carefully to prevent burning.
