A rich and creamy custard dessert with a crisp caramelized sugar topping.
Ingredients

- 6 large egg yolks
- 1/2 cup granulated sugar, plus more for topping
- 2 cups heavy cream
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 325°F (160°C).
- In a medium bowl, whisk together the egg yolks and 1/2 cup sugar until pale and slightly thickened.
- In a saucepan, heat the heavy cream over medium heat until it just begins to simmer. Do not boil.
- Slowly temper the egg yolk mixture by gradually whisking in about half of the hot cream.
- Pour the tempered egg mixture back into the saucepan with the remaining cream. Stir in the vanilla extract.
- Cook over low heat, stirring constantly, until the custard thickens enough to coat the back of a spoon. Do not let it boil.
- Strain the custard through a fine-mesh sieve into a bowl.
- Pour the custard evenly into four 6-ounce ramekins.
- Place the ramekins in a baking dish and fill the dish with hot water halfway up the sides of the ramekins.
- Bake for 30-35 minutes, or until the edges are set but the centers are still slightly jiggly.
- Remove the ramekins from the water bath and let them cool completely.
- Chill in the refrigerator for at least 2 hours, or until firm.
- Before serving, sprinkle about 1 tablespoon of granulated sugar evenly over the top of each custard.
- Use a kitchen torch to caramelize the sugar until it forms a crisp, golden-brown crust. Let sit for a minute before serving.
Notes
- For best results, use fresh, high-quality eggs.
- Ensure the water bath is hot when you place it in the oven.
- If you don’t have a kitchen torch, you can caramelize the sugar under your oven’s broiler, watching very carefully to prevent burning.
