Description
A rich and decadent chocolate chip cheesecake with a crunchy Oreo crust, topped with smooth chocolate ganache.

- 1 1/2 cups Oreo cookie crumbs
- 1/4 cup melted butter
- 24 oz cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup sour cream
- 1 cup chocolate chips
- 1/2 cup heavy cream
- 1/2 cup semi-sweet chocolate chips (for ganache)
Instructions
- Preheat oven to 350°F (175°C).
- Mix Oreo crumbs and melted butter. Press into the bottom of a 9-inch springform pan.
- Bake crust for 10 minutes. Let cool.
- Beat cream cheese and sugar until smooth.
- Add eggs one at a time, mixing well after each addition.
- Stir in vanilla extract and sour cream.
- Fold in chocolate chips.
- Pour batter over the cooled crust.
- Bake for 50-60 minutes, or until the center is almost set.
- Turn off oven and let cheesecake cool in oven with the door ajar for 1 hour.
- Remove from oven and let cool completely on a wire rack.
- Chill in refrigerator for at least 4 hours.
- For ganache, heat heavy cream until simmering. Pour over semi-sweet chocolate chips. Let sit for 5 minutes, then stir until smooth.
- Pour ganache over the chilled cheesecake.
- Chill again until ganache is set.
Notes
- For a smoother cheesecake, ensure cream cheese and eggs are at room temperature.
- To prevent cracking, avoid overmixing the batter and don’t overbake.
- The cheesecake can be made a day in advance.
