Crunchy roasted chickpeas with a kick of chili and lime.
Ingredients

- 1 (15 ounce) can chickpeas, rinsed and drained
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- ½ teaspoon ground cumin
- ¼ teaspoon garlic powder
- ¼ teaspoon salt
- ⅛ teaspoon cayenne pepper
- 1 tablespoon fresh lime juice
Instructions
- Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.
- Pat chickpeas very dry with a paper towel.
- In a medium bowl, toss chickpeas with olive oil, chili powder, cumin, garlic powder, salt, and cayenne pepper until evenly coated.
- Spread chickpeas in a single layer on the prepared baking sheet.
- Roast for 20-25 minutes, or until crispy, stirring halfway through.
- Remove from oven and immediately toss with fresh lime juice.
- Let cool slightly before serving.
Notes
- Ensure chickpeas are very dry before roasting for maximum crispiness.
- Adjust chili powder and cayenne pepper to your spice preference.
- Enjoy warm or at room temperature.
