A simple recipe for baked oatmeal featuring mixed berries.
Ingredients

- 2 cups rolled oats
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/4 cup maple syrup
- 1 large egg
- 2 cups milk
- 1 teaspoon vanilla extract
- 1 cup mixed berries (fresh or frozen)
Instructions
- Preheat your oven to 375 degrees F (190 degrees C). Grease an 8×8 inch baking dish.
- In a large bowl, mix the rolled oats, baking powder, cinnamon, and salt.
- In a separate bowl, whisk together the maple syrup, egg, milk, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
- Gently fold in the mixed berries.
- Pour the mixture into the prepared baking dish.
- Bake for 35 to 40 minutes, or until the top is set and lightly golden.
- Let it cool for a few minutes before cutting and serving.
Notes
- Serve warm with a drizzle of extra maple syrup or a dollop of yogurt.
- You can substitute any milk type for cow’s milk.
