Slow Cooker Pot Roast

Description

A simple and hearty pot roast recipe cooked in a slow cooker.


Ingredients

  • 34 lb beef chuck roast
  • 1 tbsp olive oil
  • 1 large onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 1 cup beef broth
  • 1/4 cup Worcestershire sauce
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste

Instructions

  1. Season the beef roast generously with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Sear the roast on all sides until browned.
  3. Transfer the seared roast to your slow cooker.
  4. Add the chopped onion, carrots, and celery around the roast.
  5. Stir in the minced garlic, beef broth, and Worcestershire sauce.
  6. Sprinkle with thyme and rosemary.
  7. Cover and cook on low for 8-10 hours, or on high for 4-5 hours, until the beef is tender.
  8. Remove the roast and vegetables from the slow cooker. Let the roast rest for 10 minutes before slicing.
  9. Serve the sliced roast with the cooked vegetables and cooking liquid.

Notes

  • For thicker gravy, you can mix 2 tablespoons of cornstarch with 2 tablespoons of cold water and stir it into the cooking liquid during the last 30 minutes of cooking.
  • You can add potatoes along with the other vegetables for a complete meal.
