Ingredients
Scale
- 2 lbs boneless, skinless chicken breasts or thighs
- 1 (18 ounce) bottle barbecue sauce
- 1 (8 ounce) can crushed pineapple, undrained
- 1/2 cup brown sugar, packed
- 1/4 cup apple cider vinegar
- 1 tablespoon Worcestershire sauce
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Place the chicken in the bottom of a slow cooker.
- In a medium bowl, whisk together the barbecue sauce, crushed pineapple (with juice), brown sugar, apple cider vinegar, Worcestershire sauce, garlic powder, salt, and pepper.
- Pour the sauce mixture over the chicken in the slow cooker.
- Cover and cook on low for 6 to 8 hours, or on high for 3 to 4 hours, until the chicken is cooked through and easily shredded.
- Remove the chicken and shred it using two forks. Return the shredded chicken to the sauce in the slow cooker and stir to coat.
- Serve hot over rice or on buns.
Notes
- For thicker sauce, remove the lid for the last 30 minutes of cooking time.
- You can substitute chicken thighs for breasts if you prefer darker meat.
