Slow Cooker Chicken and Dumplings

Description

A comforting and easy slow cooker recipe for chicken and dumplings.


Ingredients

  • 2 pounds boneless, skinless chicken breasts
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 1/2 cup chopped onion
  • 4 cups chicken broth
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 (10.5 ounce) can condensed cream of chicken soup
  • 1 (8 ounce) can refrigerated crescent rolls

Instructions

  1. Place chicken breasts in the bottom of your slow cooker.
  2. Add carrots, celery, and onion over the chicken.
  3. Pour in chicken broth.
  4. Stir in thyme, salt, and pepper.
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until chicken is cooked through.
  6. Remove chicken from slow cooker and shred it with two forks.
  7. Return shredded chicken to the slow cooker.
  8. Stir in cream of chicken soup.
  9. Bring mixture to a simmer.
  10. Unroll crescent rolls and separate into triangles.
  11. Drop crescent roll triangles into the simmering liquid.
  12. Cover and cook for an additional 20-30 minutes, or until dumplings are cooked through.

Notes

  • For a thicker stew, you can mix 2 tablespoons of cornstarch with 2 tablespoons of cold water and stir it into the slow cooker during the last 30 minutes of cooking.
  • You can add other vegetables like peas or corn if desired.
