A comforting and easy slow cooker recipe for chicken and dumplings.

- 2 pounds boneless, skinless chicken breasts
- 1 cup chopped carrots
- 1 cup chopped celery
- 1/2 cup chopped onion
- 4 cups chicken broth
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 (10.5 ounce) can condensed cream of chicken soup
- 1 (8 ounce) can refrigerated crescent rolls
Instructions
- Place chicken breasts in the bottom of your slow cooker.
- Add carrots, celery, and onion over the chicken.
- Pour in chicken broth.
- Stir in thyme, salt, and pepper.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, until chicken is cooked through.
- Remove chicken from slow cooker and shred it with two forks.
- Return shredded chicken to the slow cooker.
- Stir in cream of chicken soup.
- Bring mixture to a simmer.
- Unroll crescent rolls and separate into triangles.
- Drop crescent roll triangles into the simmering liquid.
- Cover and cook for an additional 20-30 minutes, or until dumplings are cooked through.
Notes
- For a thicker stew, you can mix 2 tablespoons of cornstarch with 2 tablespoons of cold water and stir it into the slow cooker during the last 30 minutes of cooking.
- You can add other vegetables like peas or corn if desired.
