Slow Cooker Pot Roast

Description

A simple and hearty pot roast recipe cooked in a slow cooker.


Ingredients

  • 34 lb beef chuck roast
  • 1 large onion, sliced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 1 cup beef broth
  • 1/4 cup Worcestershire sauce
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste

Instructions

  1. Season the beef chuck roast with salt and pepper.
  2. Place the sliced onion, chopped carrots, and celery in the bottom of your slow cooker.
  3. Add the minced garlic.
  4. Place the seasoned roast on top of the vegetables.
  5. In a small bowl, whisk together the beef broth, Worcestershire sauce, and tomato paste.
  6. Pour the liquid mixture over the roast.
  7. Sprinkle the thyme and rosemary over the top.
  8. Cover and cook on low for 8-10 hours or on high for 4-5 hours, until the roast is tender.
  9. Remove the roast from the slow cooker and shred or slice it.
  10. Serve with the cooked vegetables and cooking liquid.

Notes

  • For thicker gravy, you can remove the liquid from the slow cooker and thicken it with a cornstarch slurry.
  • Add potatoes along with the other vegetables for a complete meal.
