- 1 pound potato gnocchi
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 5 ounces fresh spinach
- 1/2 cup crumbled feta cheese
- 1/4 cup vegetable broth
- Salt to taste
- Black pepper to taste
Instructions
- Heat the olive oil in a large skillet over medium-high heat.
- Add the gnocchi to the skillet in a single layer. Cook for 5 to 7 minutes, turning occasionally, until the gnocchi are golden brown and crispy. Remove the gnocchi from the skillet and set aside.
- Add the minced garlic to the same skillet and cook for 30 seconds until fragrant.
- Add the spinach to the skillet. Cook until wilted, about 2 minutes.
- Pour in the vegetable broth and let it simmer for 1 minute, scraping up any browned bits from the bottom of the pan.
- Return the crispy gnocchi to the skillet. Toss gently to combine.
- Remove the skillet from the heat. Stir in the crumbled feta cheese.
- Season with salt and pepper to your taste. Serve immediately.
Notes
- For extra flavor, add a squeeze of fresh lemon juice before serving.
- You can substitute frozen spinach if you thaw and squeeze out excess water first.
