Description

Enjoy these delicious and crispy fried zucchini spears as a perfect appetizer or side dish.

Ingredients

Scale
  • 2 large zucchinis
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1.5 cups panko breadcrumbs
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • Vegetable oil for frying

Instructions

  1. Wash and trim the ends of the zucchinis. Cut each zucchini lengthwise into spears.
  2. Set up three shallow dishes. In the first, place the flour. In the second, whisk the eggs. In the third, combine the panko breadcrumbs, salt, and pepper.
  3. Dredge each zucchini spear first in the flour, shaking off any excess.
  4. Dip the floured spear into the beaten eggs, ensuring it is fully coated.
  5. Roll the egg-coated spear in the panko breadcrumb mixture, pressing gently to adhere the crumbs.
  6. Heat about 1-2 inches of vegetable oil in a large skillet or Dutch oven over medium-high heat to 350°F (175°C).
  7. Carefully place the breaded zucchini spears into the hot oil, working in batches to avoid overcrowding.
  8. Fry for 2-3 minutes per side, until golden brown and crispy.
  9. Remove the fried zucchini spears with a slotted spoon and place them on a wire rack set over a baking sheet to drain excess oil.
  10. Serve hot with your favorite dipping sauce.

Notes

  • For extra crispiness, you can double-coat the zucchini spears by dipping them in egg and then breadcrumbs again before frying.
  • Ensure the oil is at the correct temperature for optimal crispiness and to prevent the zucchini from becoming greasy.
  • Drain on paper towels if a wire rack is not available.
