Instructions
- Wash and trim the ends of the zucchinis. Cut each zucchini lengthwise into spears.
- Set up three shallow dishes. In the first, place the flour. In the second, whisk the eggs. In the third, combine the panko breadcrumbs, salt, and pepper.
- Dredge each zucchini spear first in the flour, shaking off any excess.
- Dip the floured spear into the beaten eggs, ensuring it is fully coated.
- Roll the egg-coated spear in the panko breadcrumb mixture, pressing gently to adhere the crumbs.
- Heat about 1-2 inches of vegetable oil in a large skillet or Dutch oven over medium-high heat to 350°F (175°C).
- Carefully place the breaded zucchini spears into the hot oil, working in batches to avoid overcrowding.
- Fry for 2-3 minutes per side, until golden brown and crispy.
- Remove the fried zucchini spears with a slotted spoon and place them on a wire rack set over a baking sheet to drain excess oil.
- Serve hot with your favorite dipping sauce.

- For extra crispiness, you can double-coat the zucchini spears by dipping them in egg and then breadcrumbs again before frying.
