- 2 pounds chicken pieces (thighs, drumsticks, breasts)
- 2 cups all-purpose flour
- 1 tablespoon salt
- 1 teaspoon black pepper
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 2 large eggs
- 1/2 cup milk
- Vegetable oil for frying
Instructions
- Pat the chicken pieces dry with paper towels.
- In a shallow dish, whisk together the flour, salt, pepper, paprika, garlic powder, and onion powder.
- In another shallow dish, whisk the eggs and milk.
- Dip each chicken piece first into the egg mixture, letting any excess drip off, then dredge it thoroughly in the flour mixture, pressing to coat.
- Place the coated chicken on a wire rack and let it sit for about 10-15 minutes to allow the coating to adhere.
- In a large, heavy skillet, heat about 1 inch of vegetable oil over medium-high heat until it reaches 350°F (175°C).
- Carefully place a few chicken pieces into the hot oil, being careful not to overcrowd the skillet.
- Fry the chicken for about 6-8 minutes per side, or until golden brown and cooked through. The internal temperature should reach 165°F (74°C).
- Remove the chicken from the skillet and place it on a clean wire rack to drain excess oil.
- Repeat with the remaining chicken pieces.
Notes
- For extra crispy skin, you can double-coat the chicken.
- Adjust the heat as needed to maintain a consistent frying temperature.
