Recipe for making chicken wings crispy using a Cajun dry rub seasoning.

- 2 lbs chicken wings, separated into flats and drumettes
- 2 tablespoons Cajun seasoning blend
- 1 teaspoon baking powder (aluminum-free)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat your oven to 425 degrees Fahrenheit (220 degrees Celsius). Line a baking sheet with aluminum foil and place a wire rack on top of the foil.
- In a large bowl, combine the Cajun seasoning, baking powder, salt, and pepper.
- Pat the chicken wings very dry with paper towels. This step helps achieve crispiness.
- Place the dried wings into the bowl with the seasoning mixture. Toss well until every piece is evenly coated.
- Arrange the coated wings in a single layer on the wire rack set over the baking sheet. Do not let the wings touch.
- Bake for 20 minutes.
- Flip the wings over.
- Bake for another 20 to 25 minutes, or until the internal temperature reaches 165 degrees Fahrenheit (74 degrees Celsius) and the skin is golden brown and crisp.
- Remove from the oven and let them rest for 5 minutes before serving.
Notes
- Baking powder reacts with the chicken skin to help draw out moisture and create a crispier exterior.
- For extra crispiness, you can briefly broil the wings for the last 1-2 minutes, watching closely to prevent burning.
