Description
A simple recipe for creamy turkey stroganoff made with ground turkey.

- 1 pound ground turkey
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 8 ounces mushrooms, sliced
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon all-purpose flour
- 1 cup beef broth
- 1/2 cup sour cream
- 8 ounces egg noodles
Instructions
- Cook egg noodles according to package directions. Drain and set aside.
- Heat olive oil in a large skillet over medium heat. Add ground turkey and cook until browned, breaking it up with a spoon. Drain excess fat.
- Add chopped onion and sliced mushrooms to the skillet. Cook until the onion is soft and mushrooms have released their liquid, about 5 to 7 minutes.
- Stir in thyme, salt, and pepper. Sprinkle flour over the turkey mixture and stir for 1 minute.
- Gradually stir in beef broth, scraping up any browned bits from the bottom of the skillet. Bring to a simmer and cook until the sauce thickens slightly, about 3 minutes.
- Remove the skillet from the heat. Stir in the sour cream until fully combined and the sauce is smooth. Do not boil after adding sour cream.
- Add the cooked egg noodles to the sauce and toss to coat. Serve immediately.
Notes
- For a richer flavor, use chicken broth instead of beef broth.
- You can substitute ground chicken for ground turkey.
