  • 1 pound pasta (spaghetti or linguine)
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • Fresh basil for garnish (optional)

Instructions

  1. Cook pasta according to package directions. Reserve 1/2 cup of the pasta water before draining.
  2. While pasta cooks, heat olive oil in a large skillet over medium heat.
  3. Add minced garlic and cook for 1 minute until fragrant. Do not let it brown.
  4. Pour in the diced tomatoes with their juice. Simmer for 5 minutes, stirring occasionally.
  5. Reduce heat to low. Stir in the heavy cream and Parmesan cheese until the sauce is smooth.
  6. Add salt and pepper. If the sauce seems too thick, add reserved pasta water, one tablespoon at a time, until desired consistency is reached.
  7. Add the drained pasta to the skillet and toss to coat thoroughly with the sauce.
  8. Serve immediately, garnished with fresh basil if you wish.

Notes

  • Use whole milk for a richer sauce if heavy cream is unavailable.
  • For extra flavor, add a pinch of red pepper flakes with the garlic.
