Description

A rich, baked cheesecake flavored with orange zest and warm spices.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar (for crust)
  • 6 tablespoons unsalted butter, melted
  • 3 (8 ounce) packages cream cheese, softened
  • 1 1/2 cups granulated sugar (for filling)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • Zest of 2 large oranges
  • 1/4 cup fresh orange juice
  • 3 large eggs

Instructions

  1. Preheat your oven to 325 degrees F (160 degrees C). Wrap the outside of a 9-inch springform pan with heavy-duty aluminum foil.
  2. Combine graham cracker crumbs and 1/4 cup sugar. Mix in melted butter until crumbs are moistened. Press mixture firmly into the bottom of the prepared springform pan.
  3. Bake the crust for 10 minutes. Remove from oven and let cool slightly.
  4. In a large bowl, beat the softened cream cheese until smooth. Gradually beat in 1 1/2 cups sugar, vanilla extract, cinnamon, nutmeg, and cloves. Mix until just combined.
  5. Beat in the orange zest and orange juice. Add eggs one at a time, mixing on low speed after each addition until just incorporated. Do not overmix.
  6. Pour the filling over the cooled crust. Place the springform pan inside a larger roasting pan. Carefully pour hot water into the roasting pan until it reaches halfway up the sides of the springform pan (this is a water bath).
  7. Bake for 55 to 65 minutes, or until the edges are set and the center has a slight jiggle.
  8. Turn off the oven, crack the oven door open slightly, and let the cheesecake cool in the oven for 1 hour.
  9. Remove the cheesecake from the water bath and let it cool completely on a wire rack.
  10. Refrigerate for at least 6 hours, or preferably overnight, before serving.

Notes

  • For easier slicing, run a thin knife dipped in hot water around the edge of the cheesecake before removing the springform ring.
  • If you do not want to use a water bath, bake at 350 degrees F (175 degrees C) for 45 minutes, but monitor closely for cracks.
