A simple recipe for a rich and satisfying soup featuring sausage and cheese tortellini.

- 1 tablespoon olive oil
- 1 pound Italian sausage, casings removed
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 teaspoon dried Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 (9 ounce) package refrigerated cheese tortellini
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese, plus more for serving
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat.
- Add sausage and cook, breaking it up with a spoon, until browned. Drain off excess grease.
- Add onion and cook until softened, about 5 minutes.
- Stir in garlic and cook for 1 minute until fragrant.
- Pour in chicken broth and diced tomatoes (with juices). Add Italian seasoning, salt, and pepper. Bring the mixture to a simmer.
- Add tortellini and cook according to package directions, usually 5-7 minutes, until tender.
- Reduce heat to low. Stir in heavy cream and Parmesan cheese until the soup is heated through. Do not boil after adding cream.
- Serve immediately, topped with extra Parmesan cheese if desired.
Notes
- For a thicker soup, you can add a slurry of 1 teaspoon cornstarch mixed with 1 tablespoon cold water during the last few minutes of cooking.
- Use mild or hot Italian sausage based on your preference.
