- 1 pound rigatoni pasta
- 1 pound Italian sausage (mild or hot, casing removed)
- 1 tablespoon olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 1 (28 ounce) can crushed tomatoes
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese, plus more for serving
- 1/4 cup fresh basil, chopped
- Salt to taste
- Black pepper to taste
Instructions
- Cook rigatoni according to package directions until al dente. Drain and set aside.
- While pasta cooks, heat olive oil in a large skillet or Dutch oven over medium-high heat. Add Italian sausage and cook, breaking it up with a spoon, until browned and cooked through. Drain off excess fat.
- Add chopped onion to the skillet with the sausage. Cook until softened, about 5-7 minutes.
- Stir in minced garlic and cook for 1 minute more until fragrant.
- Pour in crushed tomatoes and bring to a simmer. Reduce heat to low, cover, and cook for 15 minutes to allow flavors to meld.
- Stir in heavy cream, Parmesan cheese, and fresh basil. Mix until well combined and heated through.
- Add the cooked rigatoni to the sauce and toss to coat evenly.
- Season with salt and black pepper to taste.
- Serve hot, garnished with additional Parmesan cheese and fresh basil if desired.
Notes
- For a spicier dish, use hot Italian sausage.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
- You can add a splash of pasta water to the sauce if it’s too thick.
