  • 1 pound Italian sausage (mild or hot, casing removed)
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 (28 ounce) can crushed tomatoes
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese, plus more for serving
  • 1/4 cup fresh basil, chopped
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Cook rigatoni according to package directions until al dente. Drain and set aside.
  2. While pasta cooks, heat olive oil in a large skillet or Dutch oven over medium-high heat. Add Italian sausage and cook, breaking it up with a spoon, until browned and cooked through. Drain off excess fat.
  3. Add chopped onion to the skillet with the sausage. Cook until softened, about 5-7 minutes.
  4. Stir in minced garlic and cook for 1 minute more until fragrant.
  5. Pour in crushed tomatoes and bring to a simmer. Reduce heat to low, cover, and cook for 15 minutes to allow flavors to meld.
  6. Stir in heavy cream, Parmesan cheese, and fresh basil. Mix until well combined and heated through.
  7. Add the cooked rigatoni to the sauce and toss to coat evenly.
  8. Season with salt and black pepper to taste.
  9. Serve hot, garnished with additional Parmesan cheese and fresh basil if desired.
