This creamy mushroom asparagus chicken pasta delivers rich flavor and satisfying texture. Tender chicken, earthy mushrooms, and crisp asparagus are coated in a decadent sauce, all tossed with pasta for a complete meal.

- 1 pound boneless, skinless chicken breasts, cut into 1-inch cubes
- 1 tablespoon olive oil
- 8 ounces cremini mushrooms, sliced
- 1 bunch asparagus, trimmed and cut into 1-inch pieces
- 2 cloves garlic, minced
- 1/2 cup dry white wine or chicken broth
- 1 1/2 cups heavy cream
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- Salt to taste
- Black pepper to taste
- 12 ounces fettuccine or your favorite pasta
Instructions
- Cook pasta according to package directions. Drain and set aside.
- Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
- Add mushrooms to the same skillet and cook until softened and browned, about 5-7 minutes.
- Add asparagus and garlic to the skillet. Cook for 2-3 minutes until asparagus is tender-crisp.
- Pour in white wine (or chicken broth) and bring to a simmer, scraping up any browned bits from the bottom of the skillet. Cook for 2 minutes.
- Stir in heavy cream and bring to a gentle simmer. Cook for 3-5 minutes, or until sauce slightly thickens.
- Return cooked chicken to the skillet. Stir in Parmesan cheese and parsley. Season with salt and pepper to taste.
- Add cooked pasta to the skillet and toss to coat evenly with the sauce. Serve immediately.
Notes
- For a richer flavor, use chicken thighs instead of breasts.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
- If the sauce becomes too thick, add a splash of pasta water or chicken broth to thin it out.
