  • 1 pound boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 tablespoon olive oil
  • 8 ounces cremini mushrooms, sliced
  • 1 bunch asparagus, trimmed and cut into 1-inch pieces
  • 2 cloves garlic, minced
  • 1/2 cup dry white wine or chicken broth
  • 1 1/2 cups heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • Salt to taste
  • Black pepper to taste
  • 12 ounces fettuccine or your favorite pasta

Instructions

  1. Cook pasta according to package directions. Drain and set aside.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
  3. Add mushrooms to the same skillet and cook until softened and browned, about 5-7 minutes.
  4. Add asparagus and garlic to the skillet. Cook for 2-3 minutes until asparagus is tender-crisp.
  5. Pour in white wine (or chicken broth) and bring to a simmer, scraping up any browned bits from the bottom of the skillet. Cook for 2 minutes.
  6. Stir in heavy cream and bring to a gentle simmer. Cook for 3-5 minutes, or until sauce slightly thickens.
  7. Return cooked chicken to the skillet. Stir in Parmesan cheese and parsley. Season with salt and pepper to taste.
  8. Add cooked pasta to the skillet and toss to coat evenly with the sauce. Serve immediately.

Notes

  • For a richer flavor, use chicken thighs instead of breasts.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
  • If the sauce becomes too thick, add a splash of pasta water or chicken broth to thin it out.
