- 1 pound spaghetti
- 3 cups cooked chicken, shredded
- 2 cans (10.5 ounces each) condensed cream of chicken soup
- 1 can (10 ounces) diced tomatoes with green chilies, undrained
- 1 cup milk
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon black pepper
- 2 cups Monterey Jack cheese, shredded, divided
- 1/2 cup grated Parmesan cheese
Instructions
- Preheat oven to 375 degrees F (190 degrees C).
- Cook spaghetti according to package directions. Drain and set aside.
- In a large bowl, combine shredded chicken, cream of chicken soup, diced tomatoes with green chilies, milk, garlic powder, onion powder, and black pepper. Stir well.
- Add the cooked spaghetti to the chicken mixture and mix until evenly coated.
- Stir in 1 1/2 cups of the shredded Monterey Jack cheese and all of the Parmesan cheese.
- Pour the mixture into a 9×13 inch baking dish.
- Sprinkle the remaining 1/2 cup of Monterey Jack cheese over the top.
- Bake for 25-30 minutes, or until bubbly and the cheese is melted and lightly browned.
- Let stand for 5 minutes before serving.
Notes
- You can use leftover rotisserie chicken for convenience.
- Adjust the amount of green chilies to your spice preference.
- This dish reheats well. Store leftovers in an airtight container in the refrigerator for up to 3 days.
