  • 2 cans (15 ounces each) butter beans, rinsed and drained
  • 1 tablespoon olive oil
  • 1 small shallot, minced
  • 2 cloves garlic, minced
  • 1 tablespoon white miso paste
  • 1/2 cup vegetable broth
  • 1/4 cup heavy cream (or full-fat coconut milk for dairy-free)
  • 1 teaspoon lemon juice
  • Salt and black pepper to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. Heat the olive oil in a medium saucepan over medium heat.
  2. Add the minced shallot and cook until softened, about 3 minutes.
  3. Add the minced garlic and cook for 1 minute until fragrant.
  4. Stir in the miso paste until it dissolves into the oil and aromatics.
  5. Add the rinsed and drained butter beans and the vegetable broth. Bring the mixture to a gentle simmer.
  6. Reduce the heat to low and let it cook for 5 minutes, allowing the flavors to combine.
  7. Stir in the heavy cream and lemon juice. Cook for another 2 minutes until the sauce thickens slightly. Do not boil after adding cream.
  8. Season with salt and pepper to your taste.
  9. Serve hot, garnished with fresh parsley.

Notes

  • For a thicker texture, mash about one-quarter of the beans against the side of the pot before adding the cream.
  • White miso paste provides a milder flavor; use red miso for a stronger, saltier taste.
