Description
A rich, dairy-free version of traditional eggnog made with plant-based ingredients.

- 2 cups full-fat coconut milk
- 1 cup unsweetened almond milk
- 1/2 cup maple syrup
- 1/4 cup cornstarch
- 1 teaspoon ground nutmeg
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground cloves
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
- In a medium saucepan, whisk together the cornstarch and a small amount of the almond milk until smooth.
- Add the remaining almond milk, coconut milk, maple syrup, nutmeg, cinnamon, cloves, and salt to the saucepan.
- Heat the mixture over medium heat, whisking constantly until it thickens enough to coat the back of a spoon. Do not let it boil vigorously.
- Remove the saucepan from the heat and stir in the vanilla extract.
- Pour the mixture into a clean container. Cover the surface directly with plastic wrap to prevent a skin from forming.
- Chill in the refrigerator for at least 4 hours, or until completely cold and thickened.
- Serve cold, garnished with extra nutmeg or cinnamon.
Notes
- For a richer flavor, use only full-fat coconut milk.
- You can add 1 tablespoon of rum extract or bourbon extract if you want an alcoholic flavor without alcohol.
- This recipe thickens considerably upon chilling.
