- 2 cups cooked, shredded chicken
- 1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
- 1 (14 ounce) can artichoke hearts, drained and chopped
- 1 cup low-fat cottage cheese
- 1/2 cup plain Greek yogurt
- 1/4 cup grated Parmesan cheese
- 1 clove garlic, minced
- 1/4 teaspoon black pepper
- 1/4 teaspoon salt
- 1/4 cup shredded mozzarella cheese
Instructions
- Preheat your oven to 375°F (190°C).
- In a large bowl, combine the shredded chicken, squeezed spinach, and chopped artichoke hearts.
- In a separate small bowl, mix together the cottage cheese, Greek yogurt, Parmesan cheese, minced garlic, black pepper, and salt until well combined.
- Add the cottage cheese mixture to the chicken and vegetable mixture. Stir until everything is evenly coated.
- Pour the mixture into a lightly greased 8×8 inch baking dish.
- Sprinkle the shredded mozzarella cheese evenly over the top.
- Bake for 20-25 minutes, or until the casserole is heated through and the cheese is melted and lightly golden.
- Let it stand for a few minutes before serving.
Notes
- For a richer flavor, you can add a tablespoon of Dijon mustard to the cottage cheese mixture.
- Serve with a side salad or whole-wheat bread.
