Ingredients

  • 1 medium onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cups beef broth
  • 1 cup water
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup all-purpose flour
  • 1/4 cup butter
  • 1 cup milk
  • 8 ounces sharp cheddar cheese, shredded
  • 1/2 cup Velveeta or similar processed cheese, cubed
  • 1/2 cup ketchup
  • 1 tablespoon yellow mustard
  • Optional toppings: Diced tomatoes, pickles, extra cheese

Instructions

  1. Brown the ground beef in a large pot over medium heat. Drain off excess fat.
  2. Add the chopped onion, carrots, and celery to the pot with the beef. Cook until vegetables soften, about 5 to 7 minutes.
  3. Pour in the beef broth and water. Add thyme, salt, and pepper. Bring the mixture to a boil, then reduce heat and simmer for 15 minutes, or until vegetables are tender.
  4. In a separate small saucepan, melt the butter over medium heat. Whisk in the flour to create a roux. Cook for 1 minute, stirring constantly.
  5. Slowly whisk the milk into the roux until smooth. Cook until the mixture thickens slightly.
  6. Gradually stir the thickened milk mixture into the soup pot.
  7. Reduce the heat to low. Add the shredded cheddar cheese and cubed processed cheese, stirring until both cheeses melt completely into the soup. Do not boil the soup after adding cheese.
  8. Stir in the ketchup and mustard.
  9. Taste and adjust seasonings if needed.
  10. Serve hot, topped with desired extras like diced pickles or tomatoes.
