Ingredients

- 1 tablespoon unsalted butter
- 1 cup chopped yellow onion
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 2 cups chopped peeled carrots
- 1 cup chopped celery
- 1 cup chopped potatoes
- 1/2 cup heavy cream
- Salt and black pepper to taste
Instructions
- Melt butter in a large pot over medium heat.
- Add onion and garlic; cook until softened, about 5 minutes.
- Pour in vegetable broth, carrots, celery, and potatoes. Bring to a boil.
- Reduce heat and simmer until vegetables are tender, about 20 minutes.
- Remove from heat and let cool slightly.
- Carefully transfer soup to a blender and blend until smooth. Alternatively, use an immersion blender.
- Return soup to the pot. Stir in heavy cream.
- Season with salt and pepper. Heat gently until warm, do not boil.
- Serve hot.
Notes
- For a thicker soup, use less broth.
- Add other vegetables like zucchini or bell peppers.
- Garnish with fresh herbs like parsley or chives.
