- 1 (15 ounce) can black beans, rinsed and drained
- 1 (15 ounce) can pinto beans, rinsed and drained
- 1 (15 ounce) can black-eyed peas, rinsed and drained
- 1 (15.25 ounce) can whole kernel corn, drained
- 1 cup chopped red onion
- 1 cup chopped green bell pepper
- 1 cup chopped red bell pepper
- 1/2 cup chopped fresh cilantro
- 1 (16 ounce) bottle creamy Italian salad dressing
- 1 (8 ounce) package cream cheese, softened
Instructions
- In a large bowl, combine the black beans, pinto beans, black-eyed peas, corn, red onion, green bell pepper, red bell pepper, and cilantro.
- In a separate bowl, whisk together the creamy Italian salad dressing and softened cream cheese until smooth.
- Pour the dressing mixture over the bean and vegetable mixture.
- Stir gently to coat all ingredients evenly.
- Cover and refrigerate for at least 1 hour before serving to allow flavors to meld.
- Serve with tortilla chips or crackers.
Notes
- For a spicier dip, add chopped jalapeño peppers.
- You can substitute other types of beans or vegetables based on your preference.
