Ingredients

- 1 and 1/2 cups graham cracker crumbs
- 1/2 cup melted unsalted butter
- 1/4 cup granulated sugar
- 1 (14 ounce) can sweetened condensed milk
- 1 cup cream of coconut
- 1/2 cup lime juice
- 1 teaspoon vanilla extract
- 1 cup chopped nuts (such as pecans or walnuts)
- Whipped cream for topping (optional)
Instructions
- Preheat oven to 350 degrees F (175 degrees C).
- In a medium bowl, combine graham cracker crumbs, melted butter, and sugar. Press mixture into the bottom of a 9-inch pie plate.
- Bake crust for 8-10 minutes, or until lightly browned. Let cool completely.
- In a large bowl, whisk together sweetened condensed milk, cream of coconut, lime juice, and vanilla extract until smooth.
- Fold in chopped nuts.
- Pour filling into the cooled pie crust.
- Chill in the refrigerator for at least 4 hours, or until set.
- Serve with whipped cream, if desired.
Notes
- You can use a store-bought graham cracker crust if you prefer.
- Adjust the amount of nuts to your preference.
- For a firmer pie, chill overnight.
