A simple recipe for a comforting casserole made with chicken and wild rice in a creamy sauce.


Ingredients

  • 1 cup uncooked wild rice blend
  • 2 cups chicken broth
  • 1 tablespoon butter
  • 1 small onion, chopped
  • 1 cup sliced celery
  • 1 can (10.5 ounces) cream of mushroom soup
  • 1 can (10.5 ounces) cream of chicken soup
  • 1 cup milk
  • 2 cups cooked, shredded chicken
  • 1 cup frozen peas
  • 1/2 cup shredded cheddar cheese
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. Cook the wild rice according to package directions using the chicken broth instead of water, if possible. Drain any excess liquid.
  3. While the rice cooks, melt the butter in a skillet over medium heat. Add the onion and celery and cook until soft, about 5 minutes.
  4. In a large bowl, combine the cooked rice, cooked vegetables, cream of mushroom soup, cream of chicken soup, milk, and shredded chicken. Mix well.
  5. Stir in the frozen peas. Season with salt and pepper.
  6. Pour the mixture into the prepared baking dish.
  7. Sprinkle the shredded cheddar cheese evenly over the top.
  8. Bake for 25 to 30 minutes, or until bubbly and the cheese is melted and lightly browned.

Notes

  • You can substitute frozen mixed vegetables for the peas if you prefer.
  • For a richer flavor, use homemade chicken broth.
  • If you do not have cooked chicken, you can cook 1 pound of chicken breast and shred it before starting the recipe.
