This Creamsicle Cake combines the classic flavors of orange and vanilla in a moist cake with a creamy frosting.

- 1 box (15.25 ounces) vanilla cake mix
- 1 cup orange juice
- 1/2 cup vegetable oil
- 3 large eggs
- 1 teaspoon orange zest
- 1 cup unsalted butter, softened
- 4 cups powdered sugar
- 1 teaspoon vanilla extract
- 2–3 tablespoons milk or cream
- Orange food coloring (optional)
Instructions
- Preheat oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.
- In a large bowl, combine cake mix, orange juice, vegetable oil, eggs, and orange zest. Beat with an electric mixer on medium speed for 2 minutes.
- Pour batter evenly into the prepared cake pans.
- Bake for 28-32 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let cakes cool in the pans for 10 minutes, then invert onto a wire rack to cool completely.
- To make the frosting, beat softened butter in a large bowl with an electric mixer until light and fluffy.
- Gradually add powdered sugar, one cup at a time, beating well after each addition.
- Add vanilla extract and 2 tablespoons of milk or cream. Beat until smooth and creamy. Add more milk or cream if needed for desired consistency.
- If desired, add a few drops of orange food coloring and mix until combined.
- Once cakes are completely cool, frost the layers and sides of the cake.

- Do not overmix the cake batter; mix until just combined.
- For a stronger orange flavor, use fresh orange juice.
- Store leftover cake in an airtight container at room temperature for up to 3 days or in the refrigerator for up to 5 days.
