Description

Ingredients

  • 1 box (15.25 ounces) vanilla cake mix
  • 1 cup orange juice
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 teaspoon orange zest
  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 23 tablespoons milk or cream
  • Orange food coloring (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.
  2. In a large bowl, combine cake mix, orange juice, vegetable oil, eggs, and orange zest. Beat with an electric mixer on medium speed for 2 minutes.
  3. Pour batter evenly into the prepared cake pans.
  4. Bake for 28-32 minutes, or until a wooden skewer inserted into the center comes out clean.
  5. Let cakes cool in the pans for 10 minutes, then invert onto a wire rack to cool completely.
  6. To make the frosting, beat softened butter in a large bowl with an electric mixer until light and fluffy.
  7. Gradually add powdered sugar, one cup at a time, beating well after each addition.
  8. Add vanilla extract and 2 tablespoons of milk or cream. Beat until smooth and creamy. Add more milk or cream if needed for desired consistency.
  9. If desired, add a few drops of orange food coloring and mix until combined.
  10. Once cakes are completely cool, frost the layers and sides of the cake.
