Tangy cranberry and bright orange flavors combined in a rich cheesecake bar with a buttery crust.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 6 tablespoons unsalted butter, melted
  • 16 ounces cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • Zest of 1 orange
  • 1/4 cup fresh orange juice
  • 1/2 cup dried cranberries

Instructions

  1. Preheat your oven to 350 degrees F (175 degrees C). Line a 9×13 inch baking pan with parchment paper, leaving an overhang on the sides.
  2. Combine graham cracker crumbs and 1/4 cup sugar in a bowl. Pour in melted butter and mix until combined. Press the mixture firmly into the bottom of the prepared pan.
  3. Bake the crust for 10 minutes. Remove from the oven and set aside.
  4. In a large bowl, beat the softened cream cheese and 1/2 cup sugar until smooth.
  5. Beat in the eggs one at a time, mixing well after each addition.
  6. Stir in the vanilla extract, orange zest, and orange juice until just combined. Do not overmix.
  7. Gently fold in the dried cranberries.
  8. Pour the cheesecake filling over the baked crust.
  9. Bake for 25 to 30 minutes, or until the edges are set and the center is almost set.
  10. Turn off the oven and let the bars cool in the oven with the door slightly ajar for 30 minutes.
  11. Remove from the oven and cool completely on a wire rack.
  12. Chill the bars in the refrigerator for at least 4 hours before cutting into squares.

Notes

  • For easier removal, use the parchment paper overhang to lift the cooled bars out of the pan before slicing.
  • If you prefer a smoother texture, use room temperature cream cheese.
