  • 1/2 cup all-purpose flour (for topping)
  • 1/4 cup packed brown sugar (for topping)
  • 1/4 cup cold unsalted butter, cut into small pieces (for topping)
  • 1/4 cup chopped pecans (optional, for topping)

Instructions

  1. Preheat your oven to 350 degrees F (175 degrees C). Grease and flour a 9-inch round cake pan.
  2. In a medium bowl, whisk together 1 3/4 cups flour, baking powder, and baking soda. Set aside.
  3. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Beat in the egg, then stir in the milk, vanilla extract, and 1/4 cup maple syrup until just combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just blended. Do not overmix.
  6. Gently fold in the cranberries. Pour the batter into the prepared cake pan.
  7. Prepare the topping: In a small bowl, combine 1/2 cup flour, brown sugar, and cold butter pieces. Use your fingers or a pastry blender to cut the butter into the flour mixture until coarse crumbs form. Stir in pecans if using.
  8. Sprinkle the topping evenly over the batter.
  9. Bake for 40 to 45 minutes, or until a toothpick inserted into the center comes out clean.
  10. Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.

Notes

  • If using frozen cranberries, do not thaw them before adding them to the batter.
  • For an extra maple flavor, you can drizzle a small amount of extra maple syrup over the warm cake after baking.
  • You can substitute walnuts for pecans in the topping if desired.
