Ingredients

  • 1/2 cup whole wheat flour
  • 1 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/2 cup water
  • 1/4 cup olive oil
  • Optional: 1 teaspoon dried herbs (rosemary, thyme, or oregano)
  • Optional: 1 teaspoon sesame seeds or poppy seeds for topping

Instructions

  1. Preheat your oven to 375°F (190°C). Line two baking sheets with parchment paper.
  2. In a large bowl, whisk together the all-purpose flour, whole wheat flour, salt, and baking powder. If using, stir in the dried herbs.
  3. Add the water and olive oil to the dry ingredients. Mix with a spoon or your hands until a shaggy dough forms.
  4. Turn the dough out onto a lightly floured surface and knead for 2-3 minutes until it comes together into a smooth ball.
  5. Divide the dough into two equal pieces.
  6. On a lightly floured surface, roll out one piece of dough as thinly as possible, about 1/16 inch thick. The thinner you roll it, the crispier your crackers will be.
  7. Using a pizza cutter or a knife, cut the dough into desired cracker shapes (squares, rectangles, or triangles).
  8. Carefully transfer the cut crackers to the prepared baking sheets. Prick each cracker a few times with a fork to prevent puffing.
  9. If desired, sprinkle with sesame seeds or poppy seeds.
  10. Bake for 12-15 minutes, or until golden brown and crisp. Baking time may vary depending on the thickness of your crackers.
  11. Remove from the oven and let cool completely on a wire rack before serving.
  12. Repeat with the remaining dough.
