These simple homemade crackers are made without sugar or butter, perfect for a healthy snack.

- 1 1/2 cups all-purpose flour
- 1/2 cup whole wheat flour
- 1 teaspoon salt
- 1/2 teaspoon baking powder
- 1/2 cup water
- 1/4 cup olive oil
- Optional: 1 teaspoon dried herbs (rosemary, thyme, or oregano)
- Optional: 1 teaspoon sesame seeds or poppy seeds for topping
Instructions
- Preheat your oven to 375°F (190°C). Line two baking sheets with parchment paper.
- In a large bowl, whisk together the all-purpose flour, whole wheat flour, salt, and baking powder. If using, stir in the dried herbs.
- Add the water and olive oil to the dry ingredients. Mix with a spoon or your hands until a shaggy dough forms.
- Turn the dough out onto a lightly floured surface and knead for 2-3 minutes until it comes together into a smooth ball.
- Divide the dough into two equal pieces.
- On a lightly floured surface, roll out one piece of dough as thinly as possible, about 1/16 inch thick. The thinner you roll it, the crispier your crackers will be.
- Using a pizza cutter or a knife, cut the dough into desired cracker shapes (squares, rectangles, or triangles).
- Carefully transfer the cut crackers to the prepared baking sheets. Prick each cracker a few times with a fork to prevent puffing.
- If desired, sprinkle with sesame seeds or poppy seeds.
- Bake for 12-15 minutes, or until golden brown and crisp. Baking time may vary depending on the thickness of your crackers.
- Remove from the oven and let cool completely on a wire rack before serving.
- Repeat with the remaining dough.
Notes
- Store crackers in an airtight container at room temperature for up to one week.
- For a gluten-free version, use a 1:1 gluten-free flour blend.
