- 8 cups chicken broth
- 2 cups cooked chicken, shredded or diced

- 1/2 teaspoon dried rosemary
- 1/2 teaspoon black pepper
- 1/4 teaspoon salt (or to taste)
- 4 ounces egg noodles
- 1/4 cup fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat.
- Add onion, carrots, and celery to the pot. Sauté for 5-7 minutes, until vegetables begin to soften.
- Stir in minced garlic and cook for 1 minute more, until fragrant.
- Pour in chicken broth. Add shredded chicken, thyme, rosemary, pepper, and salt. Bring to a boil.
- Reduce heat to medium-low, cover, and simmer for 15 minutes to allow flavors to meld.
- Add egg noodles to the pot. Cook for 8-10 minutes, or until noodles are tender, stirring occasionally.
- Taste and adjust seasoning if needed.
- Ladle into bowls and garnish with fresh parsley.
