- 2 pounds ground beef
- 1 cup fresh bread crumbs
- 1/2 cup finely chopped onion
- 1/4 cup finely chopped green bell pepper
- 2 large eggs, beaten
- 1/4 cup milk
- 2 tablespoons Worcestershire sauce
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 6 slices bacon
- 1/2 cup barbecue sauce (for glaze)
- 2 tablespoons brown sugar (for glaze)
- 1 teaspoon apple cider vinegar (for glaze)
Instructions
- Preheat oven to 350°F (175°C).
- In a large bowl, combine ground beef, bread crumbs, onion, green bell pepper, eggs, milk, Worcestershire sauce, salt, and black pepper. Mix until just combined. Do not overmix.
- Shape the meat mixture into a loaf and place it in a 9×5-inch loaf pan or on a baking sheet.
- Lay the bacon slices over the top of the meatloaf.
- In a small bowl, whisk together barbecue sauce, brown sugar, and apple cider vinegar for the glaze.
- Brush half of the glaze over the bacon-covered meatloaf.
- Bake for 1 hour.
- Remove from oven, drain off any excess fat, and brush with the remaining glaze.
- Return to oven and bake for an additional 15-20 minutes, or until an internal temperature of 160°F (71°C) is reached.
- Let the meatloaf rest for 10 minutes before slicing and serving.
Notes
- For extra flavor, sauté the onion and bell pepper before adding them to the meat mixture.
- You can use a mix of ground beef and ground pork for a different texture and flavor.
- Adjust the amount of barbecue sauce and brown sugar in the glaze to your taste.
