Description

Ingredients

  • 2 pounds ground beef
  • 1 cup fresh bread crumbs
  • 1/2 cup finely chopped onion
  • 1/4 cup finely chopped green bell pepper
  • 2 large eggs, beaten
  • 1/4 cup milk
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 6 slices bacon
  • 1/2 cup barbecue sauce (for glaze)
  • 2 tablespoons brown sugar (for glaze)
  • 1 teaspoon apple cider vinegar (for glaze)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, combine ground beef, bread crumbs, onion, green bell pepper, eggs, milk, Worcestershire sauce, salt, and black pepper. Mix until just combined. Do not overmix.
  3. Shape the meat mixture into a loaf and place it in a 9×5-inch loaf pan or on a baking sheet.
  4. Lay the bacon slices over the top of the meatloaf.
  5. In a small bowl, whisk together barbecue sauce, brown sugar, and apple cider vinegar for the glaze.
  6. Brush half of the glaze over the bacon-covered meatloaf.
  7. Bake for 1 hour.
  8. Remove from oven, drain off any excess fat, and brush with the remaining glaze.
  9. Return to oven and bake for an additional 15-20 minutes, or until an internal temperature of 160°F (71°C) is reached.
  10. Let the meatloaf rest for 10 minutes before slicing and serving.

Notes

  • For extra flavor, sauté the onion and bell pepper before adding them to the meat mixture.
  • You can use a mix of ground beef and ground pork for a different texture and flavor.
  • Adjust the amount of barbecue sauce and brown sugar in the glaze to your taste.
