- 1 1/2 cups all-purpose flour
- 1 cup yellow cornmeal
- 1/4 cup granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 1/2 cups buttermilk
- 1/2 cup melted unsalted butter
- 2 large eggs
- 1 cup shredded smoked gouda cheese
- Honey for drizzling
Instructions
- Preheat your waffle iron.
- In a large bowl, whisk together the flour, cornmeal, sugar, baking powder, baking soda, salt, and pepper.
- In a separate bowl, whisk together the buttermilk, melted butter, and eggs.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
- Gently fold in the shredded smoked gouda cheese.
- Lightly grease the waffle iron.
- Pour about 1/4 cup of batter onto the waffle iron for each bite.
- Cook according to your waffle iron’s instructions until golden brown and cooked through.
- Remove from the waffle iron and serve warm.
- Drizzle with honey before serving.
Notes
- You can use a mini waffle iron for smaller bites.
- Leftovers can be reheated in a toaster oven or air fryer.
- Experiment with different cheeses like cheddar or Gruyere.
