Ingredients

- 1/2 cup chopped red bell pepper
- 1/4 cup chopped fresh cilantro
- 1/4 cup lime juice
- 2 tablespoons olive oil

- 1/2 teaspoon black pepper
Instructions
- Combine corn, red onion, red bell pepper, and cilantro in a large bowl.
- In a small bowl, whisk together lime juice, olive oil, salt, and pepper.
- Pour dressing over corn mixture and toss to combine.
- Chill for at least 30 minutes before serving.
Notes
- You can use frozen corn, thawed, if fresh is not available.
- Add a pinch of cayenne pepper for a little heat.
