A refreshing and easy strawberry Jello pie with a creamy filling and a crisp crust.
Ingredients

- 1 (9 inch) pie crust, baked
- 1 (3 ounce) package strawberry gelatin
- 1 cup boiling water
- 1 cup cold water
- 1 (8 ounce) package cream cheese, softened
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 cup heavy cream, whipped
- Fresh strawberries, for garnish
Instructions
- Dissolve strawberry gelatin in boiling water. Stir in cold water.
- In a separate bowl, beat softened cream cheese and sugar until smooth.
- Beat in vanilla extract.
- Gradually add the gelatin mixture to the cream cheese mixture, beating until well combined.
- Fold in the whipped cream.
- Pour the filling into the baked pie crust.
- Chill for at least 4 hours, or until firm.
- Garnish with fresh strawberries before serving.
Notes
- For a firmer pie, use only 3/4 cup cold water.
- You can use a pre-made graham cracker crust for an even easier preparation.
- Ensure cream cheese is fully softened to avoid lumps.
