Ingredients

  • 1 tablespoon sugar
  • 2 teaspoons kosher salt
  • 1 packet active dry yeast
  • 3 cups all-purpose flour
  • 1/4 cup butter, melted
  • 1/2 cup baking soda
  • 9 cups water
  • 1/2 cup butter, melted
  • 1/2 cup granulated sugar
  • 2 tablespoons ground cinnamon

Instructions

  1. Dissolve sugar and salt in warm water in a large bowl. Sprinkle yeast over the top and let stand for 5 minutes until foamy.
  2. Add flour and melted butter to the yeast mixture. Mix until a shaggy dough forms.
  3. Turn dough out onto a lightly floured surface and knead for 6-8 minutes until smooth and elastic.
  4. Place dough in a lightly oiled bowl, cover, and let rise in a warm place for 1 hour until doubled in size.
  5. Preheat oven to 400°F (200°C). Line baking sheets with parchment paper.
  6. Bring 9 cups of water and baking soda to a rolling boil in a large pot.
  7. Divide dough into 12 equal pieces. Roll each piece into a rope about 12 inches long.
  8. Dip each rope into the boiling water for 30 seconds, then place on the prepared baking sheets.
  9. Bake for 12-15 minutes until golden brown.
  10. While pretzels are still warm, brush with melted butter and sprinkle generously with cinnamon sugar mixture.
