Cilantro Lime Steak Bowls

Description

A simple recipe for steak bowls seasoned with cilantro and lime.


Ingredients

  • 1.5 lb flank steak
  • 1/4 cup olive oil
  • 1/4 cup fresh lime juice
  • 1/4 cup chopped fresh cilantro
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 cups cooked rice
  • 2 cups corn kernels
  • 2 cups black beans, rinsed and drained
  • 1 avocado, sliced

Instructions

  1. Combine olive oil, lime juice, cilantro, garlic, cumin, salt, and pepper in a bowl.
  2. Place the flank steak in a resealable bag or shallow dish. Pour half of the marinade over the steak. Seal and refrigerate for at least 30 minutes, or up to 4 hours. Reserve the remaining marinade.
  3. Heat a grill or large skillet over medium-high heat. Remove the steak from the marinade and discard the used marinade.
  4. Cook the steak for 4-6 minutes per side for medium-rare, depending on thickness.
  5. Remove the steak from the heat and let it rest on a cutting board for 5 minutes.
  6. While the steak rests, briefly warm the corn and black beans if desired.
  7. Slice the steak thinly against the grain.
  8. To assemble the bowls, divide the cooked rice among four bowls. Top with corn, black beans, sliced steak, and avocado slices.
  9. Drizzle the reserved marinade over the assembled bowls before serving.

Notes

  • You can substitute flank steak with skirt steak or sirloin.
  • For extra flavor, grill the corn before adding it to the bowls.
