Description

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup packed light brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter, melted
  • 8 ounces cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/4 cup granulated sugar for topping
  • 1 teaspoon ground cinnamon for topping

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit. Line an 8×8 inch baking pan with parchment paper, leaving an overhang on two sides for easy removal.
  2. In a medium bowl, mix the flour, brown sugar, 1 teaspoon cinnamon, and salt. Pour in the melted butter and mix until crumbly. Press this mixture evenly into the bottom of the prepared pan to form the crust. Bake the crust for 10 minutes.
  3. While the crust bakes, prepare the filling. Beat the softened cream cheese and granulated sugar together until smooth. Add the egg and vanilla extract, mixing until just combined. Do not overmix.
  4. Pour the cream cheese mixture evenly over the warm crust.
  5. In a small bowl, mix the 1/4 cup granulated sugar and 1 teaspoon cinnamon for the topping. Sprinkle this mixture evenly over the cheesecake layer.
  6. Bake for 25 to 30 minutes, or until the center is mostly set but still has a slight jiggle.
  7. Let the bars cool completely in the pan on a wire rack. Once cool, chill in the refrigerator for at least 2 hours before cutting into bars.

Notes

  • For a smoother topping, you can mix the topping sugar and cinnamon before sprinkling.
  • You can dust the cooled bars with powdered sugar before serving if desired.
