Description
Make festive eggnog pancakes for a holiday breakfast.
Ingredients

- 1 1/2 cups all-purpose flour
- 2 tablespoons granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 1/4 cups eggnog
- 2 large eggs
- 2 tablespoons melted butter, plus more for griddle
- 1 teaspoon vanilla extract
- 1/4 teaspoon ground nutmeg
Instructions
- Mix flour, sugar, baking powder, baking soda, and salt in a large bowl.
- In a separate bowl, whisk together eggnog, eggs, melted butter, and vanilla extract.
- Pour the wet ingredients into the dry ingredients. Mix until just combined; do not overmix. A few lumps are fine.
- Stir in the ground nutmeg.
- Heat a lightly buttered griddle or frying pan over medium heat.
- Pour or scoop batter onto the griddle, using approximately 1/4 cup for each pancake.
- Cook until bubbles appear on the surface and the edges look set, about 2 to 3 minutes.
- Flip and cook until the other side is golden brown, about 1 to 2 minutes more.
- Serve immediately.
Notes
- Top with powdered sugar or a dusting of cinnamon for extra flavor.
- If you prefer thinner pancakes, add one or two tablespoons of milk to the batter.
