- 1 cup (2 sticks) unsalted butter, softened
- ½ cup granulated sugar
- ½ teaspoon vanilla extract
- 2 cups all-purpose flour
- ¼ teaspoon salt
- 1 cup raspberry jam
- ½ cup semi-sweet chocolate chips
Instructions
- Preheat oven to 375°F (190°C). Grease and flour a 9×13 inch baking pan.
- In a large bowl, cream together butter and sugar until light and fluffy. Stir in vanilla extract.
- In a separate bowl, whisk together flour and salt. Gradually add dry ingredients to the wet ingredients, mixing until just combined and a crumbly dough forms.
- Press half of the dough evenly into the bottom of the prepared baking pan.
- Spread the raspberry jam over the crust.
- Sprinkle chocolate chips over the jam.
- Crumble the remaining dough over the chocolate chips and jam.
- Bake for 30-35 minutes, or until the top is golden brown.
- Let cool completely in the pan before cutting into bars.
Notes
- For best results, use a good quality raspberry jam.
- Bars can be stored at room temperature in an airtight container for up to 3 days.
- For extra flavor, add a pinch of cinnamon to the crumb topping.
