Description

Simple, no-bake energy balls made with chocolate and peanut butter for a quick snack.


Ingredients

  • 1 cup rolled oats
  • 1/2 cup peanut butter
  • 1/3 cup honey or maple syrup
  • 1/4 cup ground flaxseed
  • 1/4 cup unsweetened cocoa powder
  • 1 teaspoon vanilla extract
  • 1/4 cup mini chocolate chips (optional)

Instructions

  1. Combine oats, peanut butter, honey or maple syrup, flaxseed, cocoa powder, and vanilla extract in a medium bowl.
  2. Mix all ingredients thoroughly until a uniform dough forms.
  3. If using, stir in the mini chocolate chips.
  4. Roll the mixture into small, bite-sized balls, about 1 inch in diameter.
  5. Place the balls on a plate or baking sheet lined with parchment paper.
  6. Refrigerate for at least 30 minutes to firm up before serving.

Notes

  • Store leftovers in an airtight container in the refrigerator for up to one week.
  • You can substitute almond butter or sunflower seed butter for peanut butter.
  • Add a tablespoon of chia seeds for extra fiber.
