Description

Ingredients

  • 1.5 lbs boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 8 oz cremini mushrooms, sliced
  • 5 oz fresh spinach
  • 0.5 cup heavy cream
  • 0.5 cup chicken broth
  • 0.5 cup grated Parmesan cheese
  • 0.5 tsp dried thyme
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a large oven-safe skillet over medium heat.
  3. Add chopped onion and cook until softened, about 5 minutes.
  4. Stir in minced garlic and sliced mushrooms. Cook until mushrooms are tender and browned, about 7-10 minutes.
  5. Add spinach to the skillet and cook until wilted, about 2-3 minutes.
  6. Stir in heavy cream, chicken broth, Parmesan cheese, and dried thyme. Season with salt and pepper. Bring to a simmer.
  7. Nestle chicken breasts into the sauce in the skillet.
  8. Bake for 20-25 minutes, or until chicken is cooked through and reaches an internal temperature of 165°F (74°C).
  9. Serve hot.

Notes

  • You can use chicken thighs instead of breasts.
