A comforting and easy chicken spaghetti casserole.

- 1 pound boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 1 green bell pepper, chopped
- 1 (10.75 ounce) can condensed cream of mushroom soup
- 1 (10.75 ounce) can condensed cream of chicken soup
- 2 cups chicken broth
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 8 ounces spaghetti, broken
- 1 cup shredded cheddar cheese
Instructions
- Preheat your oven to 375 degrees F (190 degrees C).
- Cook chicken breasts in boiling water until no longer pink. Drain, cool, and shred.
- In a large skillet, heat olive oil over medium heat. Add onion and bell pepper, and cook until softened, about 5 minutes.
- Stir in cream of mushroom soup, cream of chicken soup, chicken broth, salt, pepper, and garlic powder. Bring to a simmer.
- Add the broken spaghetti and shredded chicken to the skillet. Stir to combine.
- Pour the mixture into a 9×13 inch baking dish.
- Sprinkle cheddar cheese evenly over the top.
- Bake for 25-30 minutes, or until bubbly and the cheese is melted.
Notes
- For a spicier dish, add a pinch of red pepper flakes to the soup mixture.
- You can substitute rotisserie chicken for cooked chicken breasts.
