Simple Chicken and Orzo Skillet

Description

A quick and easy one-pan meal featuring chicken pieces cooked with orzo pasta in a light broth.


Ingredients

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 cup orzo pasta
  • 3 cups chicken broth
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add chicken pieces and cook until browned on all sides, about 5-7 minutes. Remove chicken from the skillet and set aside.
  3. Add onion to the skillet and cook until softened, about 3 minutes.
  4. Add garlic and cook for 1 minute more until fragrant.
  5. Stir in the orzo pasta and cook for 1 minute, stirring constantly.
  6. Pour in the chicken broth, oregano, salt, and pepper. Bring the mixture to a boil.
  7. Reduce heat to low, cover the skillet, and simmer for 10 minutes, or until the orzo is tender and most of the liquid is absorbed.
  8. Return the cooked chicken to the skillet. Stir well.
  9. Remove from heat and stir in the Parmesan cheese before serving.

Notes

  • You can add 1/2 cup of frozen peas during the last 5 minutes of simmering for extra color and nutrition.
  • Use chicken thighs instead of breasts for a richer flavor.
