Description
A quick and easy one-pan meal featuring chicken pieces cooked with orzo pasta in a light broth.
Ingredients

- 1 tablespoon olive oil
- 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 cup orzo pasta
- 3 cups chicken broth
- 1/2 teaspoon dried oregano
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 1/4 cup grated Parmesan cheese
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add chicken pieces and cook until browned on all sides, about 5-7 minutes. Remove chicken from the skillet and set aside.
- Add onion to the skillet and cook until softened, about 3 minutes.
- Add garlic and cook for 1 minute more until fragrant.
- Stir in the orzo pasta and cook for 1 minute, stirring constantly.
- Pour in the chicken broth, oregano, salt, and pepper. Bring the mixture to a boil.
- Reduce heat to low, cover the skillet, and simmer for 10 minutes, or until the orzo is tender and most of the liquid is absorbed.
- Return the cooked chicken to the skillet. Stir well.
- Remove from heat and stir in the Parmesan cheese before serving.
Notes
- You can add 1/2 cup of frozen peas during the last 5 minutes of simmering for extra color and nutrition.
- Use chicken thighs instead of breasts for a richer flavor.
