- 1 cup graham cracker crumbs
- 1/4 cup granulated sugar
- 1/4 cup unsalted butter, melted
- 2 (8 ounce) packages cream cheese, softened
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 1/4 cup maraschino cherry juice
- 1/2 cup chopped maraschino cherries
- 1/4 cup mini chocolate chips
Instructions
- Preheat oven to 350°F (175°C). Line mini muffin tins with paper liners.
- In a small bowl, combine graham cracker crumbs, 1/4 cup sugar, and melted butter. Press a tablespoon of the mixture into the bottom of each lined muffin cup.
- In a large bowl, beat cream cheese and 1/2 cup sugar until smooth. Beat in vanilla extract. Add eggs one at a time, beating well after each addition. Stir in cherry juice, chopped cherries, and chocolate chips.
- Spoon the cream cheese mixture over the crusts, filling each cup about two-thirds full.
- Bake for 15-20 minutes, or until the centers are set.
- Let cool in the muffin tin for 10 minutes, then transfer to a wire rack to cool completely.
- Chill for at least 2 hours before serving.
Notes
- Make sure your cream cheese is fully softened for a smooth batter.
- Do not overbake the cheesecake bites; they will continue to set as they cool.
- Store in an airtight container in the refrigerator.
