Ingredients

  • 1 cup graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/4 cup unsalted butter, melted
  • 2 (8 ounce) packages cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1/4 cup maraschino cherry juice
  • 1/2 cup chopped maraschino cherries
  • 1/4 cup mini chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C). Line mini muffin tins with paper liners.
  2. In a small bowl, combine graham cracker crumbs, 1/4 cup sugar, and melted butter. Press a tablespoon of the mixture into the bottom of each lined muffin cup.
  3. In a large bowl, beat cream cheese and 1/2 cup sugar until smooth. Beat in vanilla extract. Add eggs one at a time, beating well after each addition. Stir in cherry juice, chopped cherries, and chocolate chips.
  4. Spoon the cream cheese mixture over the crusts, filling each cup about two-thirds full.
  5. Bake for 15-20 minutes, or until the centers are set.
  6. Let cool in the muffin tin for 10 minutes, then transfer to a wire rack to cool completely.
  7. Chill for at least 2 hours before serving.

  • Make sure your cream cheese is fully softened for a smooth batter.
  • Do not overbake the cheesecake bites; they will continue to set as they cool.
