Ingredients

  • 2 medium zucchini, grated and squeezed dry
  • 1 cup cherry tomatoes, halved
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 large egg, lightly beaten
  • 2 tablespoons all-purpose flour
  • 1 clove garlic, minced
  • 1/4 teaspoon dried oregano
  • Salt to taste
  • Black pepper to taste
  • Cooking spray

Instructions

  1. Preheat your oven to 400°F (200°C). Lightly grease a mini muffin tin with cooking spray.
  2. In a medium bowl, combine the squeezed zucchini, halved cherry tomatoes, mozzarella cheese, Parmesan cheese, egg, flour, minced garlic, and oregano.
  3. Season the mixture with salt and pepper. Mix well until everything is evenly combined.
  4. Spoon the mixture into the prepared mini muffin cups, pressing down gently. Fill each cup about three-quarters full.
  5. Bake for 15 to 18 minutes, or until the edges are lightly golden brown and the centers are set.
  6. Let the bites cool in the tin for 5 minutes before carefully removing them.

Notes

  • Squeezing the excess water from the grated zucchini is important for firm bites. Use a clean kitchen towel or paper towels to press out the liquid.
  • You can substitute cheddar cheese for mozzarella if you prefer a sharper flavor.
