- 1 pound chicken breast, cut into bite-sized pieces
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 12 ounces pasta (such as rotini or penne)
- 1 cup Velveeta cheese, cubed
- 1 cup shredded mozzarella cheese
- 1/2 cup milk
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1/4 cup chopped fresh parsley
Instructions
- Season chicken pieces with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through. Remove chicken from skillet and set aside.
- Cook pasta according to package directions. Drain, reserving about 1/2 cup of pasta water.
- In the same skillet, add minced garlic and cook for 30 seconds until fragrant.
- Reduce heat to low. Add Velveeta cheese, mozzarella cheese, and milk to the skillet. Stir until cheeses are melted and sauce is smooth.
- Stir in Parmesan cheese. If the sauce is too thick, add a little reserved pasta water until desired consistency is reached.
- Add the cooked chicken and drained pasta to the skillet with the sauce. Toss to coat evenly.
- Garnish with fresh parsley before serving.
Notes
- For a spicier dish, add a pinch of red pepper flakes to the sauce.
- You can substitute chicken thighs for chicken breast if preferred.
- Other vegetables like broccoli or peas can be added for extra nutrition.
