A hearty and flavorful casserole featuring bell peppers stuffed with seasoned ground beef and topped with melted cheese.

- 1 lb ground beef
- 1 onion, chopped
- 1 green bell pepper, halved and seeded
- 1 red bell pepper, halved and seeded
- 1 cup cooked rice
- 1 (15 oz) can tomato sauce
- 1 tsp Italian seasoning
- 1/2 tsp garlic powder
- Salt and pepper to taste
- 1 cup shredded cheddar cheese
Instructions
- Preheat oven to 375°F (190°C).
- Brown ground beef and chopped onion in a skillet over medium heat. Drain fat.
- Stir in cooked rice, tomato sauce, Italian seasoning, garlic powder, salt, and pepper.
- Fill bell pepper halves with the beef mixture.
- Place filled peppers in a baking dish.
- Cover dish with foil.
- Bake for 30 minutes.
- Remove foil and sprinkle with cheddar cheese.
- Bake for another 10-15 minutes, or until cheese is melted and bubbly.
Notes
- You can use any color of bell peppers.
- Add other vegetables like corn or peas for extra flavor.
- For a spicier casserole, add red pepper flakes to the beef mixture.
