- 2 tablespoons ranch seasoning mix
- Salt and pepper to taste
Instructions
- Cook the breakfast sausage in a large skillet over medium heat until browned. Drain off any excess grease.
- Add the quartered baby potatoes, chopped onion, and chopped bell pepper to the skillet with the sausage.
- Cover the skillet and cook for 15-20 minutes, or until the potatoes are tender, stirring occasionally.
- In a small bowl, whisk together the shredded cheddar cheese, sour cream, milk, and ranch seasoning mix until smooth.
- Pour the cheese sauce over the potato and sausage mixture in the skillet.
- Stir to combine and cook for another 3-5 minutes, or until the sauce is heated through and bubbly.
- Season with salt and pepper to taste.
